An Evening with Hyland Vineyards - Willamette Valley, Oregon

Join us at Maximilien for an unforgettable multi-course dinner featuring the acclaimed wines of Hyland Vineyards, guided by special guests Damien Davis and Jessica Endsworth of Hyland Estates, who will share insights into the vineyard’s history, philosophy, and celebrated bottlings.

Chef Fidel Mendoza has crafted a Bourgogne-inspired menu to complement each glass — from classic Jambon persillé, to roasted scallops with corn velouté, braised rabbit à la bourguignonne, and a decadent poached pear finale.

All of this for just $100 per guest (wine pairings included) — an exceptional value for an evening of fine dining, conversation with the winemaker, and sweeping views of Elliott Bay and the Olympic Mountains.

About Hyland Vineyards:

Founded in 1971, Hyland Vineyards is one of Oregon’s most historic and expansive vineyards, with over 185 acres under vine in the McMinnville AVA. Its old-vine Pinot Noir, rooted in volcanic Jory soils, produces wines of exceptional depth and character.

About Jessica and Damian:

Damian Davis has been crafting award-winning Oregon and Washington wines for 20 years, including the popular Portlandia label. With roots in hospitality from his family’s restaurant back East, he eventually left a tech career in Seattle to start his own winery in 2004. After a decade collaborating on Portlandia Pinot, he officially joined the NW Wine Company team in May 2025.

Jessica Endsworth has spent nearly 20 years in the Willamette Valley wine industry after falling in love with Oregon in 2003. With a background in hospitality and extensive experience across distribution, sales, and education, she now serves as VP of On-Premise and Education at NW Wine Company. Passionate about teaching, she holds an Oregon Wine Expert certification and plays key roles in major events like the Oregon Chardonnay Celebration and the International Pinot Noir Celebration.

Pre-paid reservations are available online only. This non-refundable reservation pays for your meal and wine tasting experience at Maximilien including service and taxes.

Price per person: $100 plus 5% Service Charge, 20% Gratuity and 10.35% WA sales tax.

  • Why pre-pay for reservations ?

    Paid reservation allow us to guarantee your reservations. We are a small restaurant, several no-shows has a negative impact on our staff, kitchen and prevents other guests from visiting us.

  • What's included ?

    The $100 food and wine pairing menu, 20% gratuity, 5% service charge, 10.35% sales tax. Other beverages, extra wine and any other extra will be billed to you at the end of your meal.

  • What should I do if I am running late?

    If you are running late, please call us at 206-682-7270. Note that if you do not arrive within 10 minutes of your ticket time, your experience will be abbreviated as to not make other guests wait.

  • I can't make my reservation. Can you transfer my reservation ?

    No. You are welcome to sell or give away your reservation yourself. All resales are the responsibility of the original purchaser. We will not be held responsible for forgeries or misrepresentations.

  • What’s your refund policy?
    We do not offer refund for any reason, including sickness, if you are unable to make your reservation. We also are unable to offer a credit or rescheduling. We are staffing, ordering/preparing food for your party if you are unable to make it please try to transfer your reservations to friends/family. We can also have you pick up the meal for take out.

  • Are kids allowed?
    No. Everyone must be 21 years or older and have a valid state issued ID.
